Veg cheese quesadilla

This very own Mexican dish goes Indian with all spices

Ingredients for serving 2

A cup of mixed vegetable ( make it healthy by adding beans, carrot, tofu, spinach, sprouts, onions, peppers)
Half a cup of mozzarella cheese and Parmesan or vary it with cedar.
salt, lemon juice for taste.
2 wheat tortilla or wheat phulka

Saute all the veggies in a big pan on low flame by adding very little oil.
Heat the flour tortilla on a tava.
Spread the sauteed vegetables, top the veg spread with grated cheese.
Cover it with another tortilla. flips the tortillas.
Cook on low flame until golden brown .
slice and serve with mayonnaise, chili sauce.

Indian Variation for a healthier one:
Instead of tortilla, use a home made phulka.
