Crispy oven baked chicken

Easy Baked chicken

Baking is fun, baking chicken is all fun. This is an easy recipe especially for a weekday dinner.

Love KFC?, want to try something similar to that then this is your recipe. I am adding recipe similar to KFC fried chicken but hot and spicy with different ingredients especially baked. No deep frying, and no regrets. You can alter the spice, according to your choice.

Add 2 tsp of mayonaisse(light), for 3 pieces of chicken tenderloins. Increase the qty accordingly.

Add a tsp of fresh ground pepper. If you dont want it spicy, skip the remaining ingredients.
for marination and add salt and Dijon mustard.
I am not adding mustard sauce, as I am adding other spices. Spices are totally your choice.
If you want add some dried basil, go ahead.
If you want to add butter, go ahead but add melted butter.

Half a tsp of chili powder

Quarter tsp of turmeric

half a tsp of garam masala

Add salt and mix all the ingredients together

Marinate the chicken in this. Reason I am adding Mayo is, it gives all the moist there is no need for eggwash.

Prick the chicken with a fork before marination.
Marinate for 20 mins. Preheat the oven at 350 F

Take a tbsp of Panko bread crumbs, this is for on piece of chicken tenderloins.

Roll each chicken on the bread crumbs seperately.

Grease a baking pan. Arrange the pieces in a baking pan, add one more layer of bread crumbs, this brings the golden texture and crispiness.

Drizzle some olive oil to get the golden texture from the bread crumb and the bread crumbs don't get over roasted.

Cover the pan with aluminum foil and make 2 slits.
The slits will help chicken cook tender.

Bake for 20 mins.
Remove foil and drizzle some oilive oil.
Bake uncovered for 10 min.

I started learning cooking from my grandmother, Mrs. Gunaseeli, who gave me her recipes and tips and some measurement tools for making them. The red measuring cup that I use in my recipes was once owned by my granny. My grandmother is very passionate about cooking and travel. She has written many cook books. This blog is one way to document her writing and to make it available for everyone.
