Green Pepper Rice - Indian Lunch box ideas.

Simple super aromatic green pepper rice. All peppers, red, green or yellow, are excellent sources of vitamin C , and vitamin A, very good source of fiber.
As we all know peppers are low calorie food, but peppers have been shown to increase the body's heat and oxygen consumption for about 20 minutes after eating. This causes your body to burn extra calories, which helps with weight loss.
With all the health benefits, lets prepare green pepper rice.
This is your own recipe, alter any ingredients or add your own. This is a very simple Indian lunch idea.


Half a cup - cooked rice. 
1 Medium green pepper or capsicum
1 Medium onion. 
1 tsp cumin seeds
1 tsp mustard seeds.
1 tsp garlic minced
1 tsp ginger minced.
3-4 green chilies or reduce according to taste.
salt for taste and curry leaves.
3 tbsp canola or vegetable oil. 


In a shallow pan, heat the vegetable oil.
Temper mustard and cumin seeds in hot oil.
On medium low fry the onions, when onions turn transparent, add minced ginger and garlic saute for 2 min, then add the diced green peppers.
Cover and cook for 5-8 min on medium low.

Mix the cooked rice with the fried green pepper mixture. Serve with raita.
Simple home made Indian lunch.
