South Indian Fish Fry - Vanjaram (King Fish)

South Indian Fish Fry: 

Quite famous recipe from Chennai and other regions of Tamil Nadu. This is the most, most simple recipe with very few ingredients. This is all about the thinly sliced king fish with chili powder and salt.

Ingredients for 1 fish steak: 

1 tsp - chili powder
Quarter tsp turmeric powder
1 pinch - freshly ground pepper
salt for taste.
juice from half a lemon.
Canola oil or vegetable oil.
Curry leaves for garnishing. 

Make a paste with lemon juice and chili powder, turmeric, salt.
Gently apply this paste over the fish, just like spreading butter on a bread.
Marinate the fish for atleast half an hour.
Add 2 tsp of oil to a non stick pan. When the oil is hot, sear the fish steak.
On medium low, cover and cook the steak for 5 min , turn the fish and cook uncovered for another 5 min.  Add oil whenever needed, so that the fish is not too dry.
Repeat the above for the remaining steaks.
